Dining with the Chefs is an annual event benefiting the Montgomery County Free Clinic. The event takes place Aug. 3, at 6 p.m. in Knowling Field House on the Wabash College Campus. Funds raised support the Clinic, which helps meet the health-care needs of Montgomery County’s most needy residents.
Each chef participating in the event this year was asked to provide a recipe from their childhood – the results are simple recipes transporting us back to simpler times. Our second recipe comes from Dr. Richard Warner, a history professor at Wabash College who also worked several years as a professional chef and is a crucial organizer of the Dining with the Chefs fundraiser. Here is Rick’s recipe for “Mexican Torte”:
My mother tells me that when I was four she would let me stand on the open oven door to stir sauces and soups. I don't have any memory of that but I do remember eating tacos that she bought in the freezer section of the store. I'll merge that memory with my first job in the restaurant industry, a largely vegetarian place called the Fresh Ground Coffee House in Burlington, Vermont (like most everywhere I worked from 1972-1989, it's no longer in business lol.) I learned to make a sort of Mexican lasagna there, which proved to be a big improvement over the frozen product. We called it "Mexican Torte":
Enough corn tortillas to line baking pan four times (like lasagna)
cut in half so that they will meet the edge of the pan
Enchilada Sauce
(Vermont) Cheddar Cheese
Sour Cream
Black Olives
Use your own judgment for quantities! (Recipes are merely suggestions....) Layer: sauce, tortillas, sauce, cheese, tortillas, dollops of sour cream and olives. repeat. Bake at 375 F for about 40 minutes.
